As part of an ongoing series, we are publishing one recipe every week from Pontiac County Recipes, a small book that is home to a collection of kitchen secrets from across the region, published by Pontiac Printshop in 1968.
Our recent rediscovery of this book has inspired us to recirculate its recipes, by way of this newspaper, through the communities from which they first came to us.
As false spring has come and gone, and second winter is upon us, you might be daydreaming of a tropical vacation. While we can’t offer you tickets to Florida or Punta Cana, we can share this recipe for orange marmalade, whose citrus notes, when paired with a piece of toast, will be sure to freshen up your dreary Canadian morning and make you dread the winter slog just a little bit less. To sunnier days ahead!
A note for this recipe: you will see the ingredients list call for 20 “breakfastcups’’ of water. This is an old British way of measuring, but a breakfast cup is about equal to a standard measuring cup.
