As part of an ongoing series, we have been publishing one recipe every week from Pontiac County Recipes, a small book that is home to a collection of kitchen secrets from across the region, published by Pontiac Printshop in 1968.
This week, however, we are making an exception to bring you the full recipe for the traditional Welsh shearing cake. Historically, the cake was baked to celebrate the communal efforts of farmers that were essential for agricultural tasks. Also traditional to shearing days was sharing a meal.
The cake was served to guests at Leystone Farms Saturday to celebrate Welsh heritage and sheep shearing (https://theequity.ca/leystone-sheep-get-spring-buzz-cuts/). I got to try a piece of the moist, lemony and buttery cake.
Whether or not you’re shearing sheep this season, this cake is worth a try. If anything, try your hand at pronouncing it in Welsh.
