Le peuple algonquin Anishinaabe entaille les \u00e9rables, utilise la \u00ab&nbsp;douce eau&nbsp;\u00bb comme rem\u00e8de et la transforme en sirop et en sucre depuis des temps imm\u00e9moriaux. Les Anishinaabe consid\u00e8rent la s\u00e8ve, le sirop et le sucre d&rsquo;\u00e9rable comme des cadeaux du Grand Esprit, Gitchi Manidoo.&nbsp;<\/p>\n<p>Le savoir sur l&rsquo;ac\u00e9riculture est l&rsquo;un des nombreux cadeaux des peuples autochtones aux colons europ\u00e9ens de l&rsquo;Est de l&rsquo;Am\u00e9rique du Nord. La s\u00e8ve d&rsquo;\u00e9rable et ses produits \u00e9taient d&rsquo;importants aliments de survie pour les peuples autochtones et les colons \u00e0 la fin de l&rsquo;hiver et au d\u00e9but du printemps, lorsque les r\u00e9serves de nourriture \u00e9taient \u00e9puis\u00e9es et que la neige recouvrait encore le sol.<\/p>\n<p>La s\u00e8ve d&rsquo;\u00e9rable coule au d\u00e9but du printemps, lorsque la temp\u00e9rature diurne monte au-dessus du point de cong\u00e9lation et que les temp\u00e9ratures nocturnes descendent en dessous du point de cong\u00e9lation, pendant ce qu&rsquo;on appelle la Lune du Sucre. Traditionnellement, les Anishinaabe recueillaient la s\u00e8ve dans des paniers d&rsquo;\u00e9corce de bouleau ou des cuves en peau d&rsquo;orignal.<\/p>\n<p>Pour transformer la s\u00e8ve, ils chauffaient des pierres de rivi\u00e8re lisses et denses dans un feu et transf\u00e9raient les pierres incandescentes dans les r\u00e9cipients remplis de liquide \u00e0 l&rsquo;aide de pinces en bois. Chaque pierre provoquait une \u00e9bullition vigoureuse et une \u00e9vaporation de la vapeur.<\/p>\n<p>Les travailleurs rempla\u00e7aient continuellement les pierres refroidies par des nouvelles pour maintenir la chaleur jusqu&rsquo;\u00e0 ce que la s\u00e8ve se r\u00e9duise en sirop.<\/p>\n<p>La s\u00e8ve \u00e9tait souvent d\u00e9plac\u00e9e \u00e0 travers une s\u00e9rie de r\u00e9cipients, la s\u00e8ve de plus en plus \u00e9paisse \u00e9tant finalis\u00e9e dans un plus petit r\u00e9cipient, ce qui aidait \u00e0 contr\u00f4ler la temp\u00e9rature et \u00e0 pr\u00e9venir les br\u00fblures. Pour le sucre granul\u00e9, le sirop \u00e9paissi \u00e9tait vers\u00e9 dans des auges en bois ou sculpt\u00e9es, puis remu\u00e9 ou agit\u00e9 jusqu&rsquo;\u00e0 ce qu&rsquo;il cristallise en pains de sucre qui se conservaient bien.<\/p>\n<p>Les peuples autochtones utilisaient le sirop d&rsquo;\u00e9rable pour conserver les viandes, comme \u00e9dulcorant pour les boissons am\u00e8res ou les m\u00e9dicaments, un anesth\u00e9sique et un tonique printanier. Le sucre d&rsquo;\u00e9rable contient des min\u00e9raux nutritifs tels que le phosphore, le magn\u00e9sium, le potassium, le fer et le calcium. Le sucre d&rsquo;\u00e9rable \u00e9tait \u00e9galement utilis\u00e9 comme article de commerce, comme le mentionne cette citation de l&rsquo;article du <em>Globe and Mail<\/em> intitul\u00e9 \u00ab&nbsp;Aussi anishinaabe que le sirop d&rsquo;\u00e9rable&nbsp;\u00bb.<\/p>\n<p>\u00ab&nbsp;Les Premiers Peuples des XVIIe au XIXe&nbsp;si\u00e8cles vendaient le sucre d&rsquo;\u00e9rable en blocs, emball\u00e9s dans des r\u00e9cipients d&rsquo;\u00e9corce de bouleau appel\u00e9s makaks, qui pouvaient peser jusqu&rsquo;\u00e0 environ 12&nbsp;kilogrammes chacun, fournissant les compagnies de traite des fourrures qui redistribuaient le sucre \u00e0 leurs postes de traite.&nbsp;\u00bb&nbsp;<\/p>\n<p>Dans son merveilleux livre de sagesse autochtone intitul\u00e9 \u00ab&nbsp;L&rsquo;Herbe douce&nbsp;\u00bb, Robin Wall Kimmerer note que les peuples autochtones ont appris \u00e0 faire le sucre des \u00e9cureuils. Selon la l\u00e9gende, un jour de printemps, un \u00e9cureuil grimpa sur un \u00e9rable, mordit une branche et but. Un jeune gar\u00e7on autochtone, regardant d&rsquo;en dessous de l&rsquo;arbre, se demanda pourquoi l&rsquo;\u00e9cureuil faisait cela puisqu&rsquo;il y avait une source d&rsquo;eau douce \u00e0 proximit\u00e9. D\u00e9cidant d&rsquo;imiter l&rsquo;\u00e9cureuil, il fit une entaille dans l&rsquo;arbre avec son couteau et d\u00e9couvrit la merveilleuse eau sucr\u00e9e qui coulait dans les veines de l&rsquo;\u00e9rable.<\/p>\n<p>L&rsquo;ac\u00e9riculture par les \u00e9cureuils a \u00e9t\u00e9 scientifiquement document\u00e9e. En 1992, Bernd Heinrich a publi\u00e9 un article dans le <em>Journal of Mammalogy<\/em> intitul\u00e9 \u00ab&nbsp;L&rsquo;ac\u00e9riculture par les \u00e9cureuils roux&nbsp;\u00bb. Heinrich a observ\u00e9 des rainures en forme de ciseau faites par des \u00e9cureuils roux sur des \u00e9rables \u00e0 sucre sur 22&nbsp;sites au Vermont et dans le Maine. Mais, gr\u00e2ce au savoir autochtone, aff\u00fbt\u00e9 pendant des mill\u00e9naires et g\u00e9n\u00e9reusement partag\u00e9, nous pouvons profiter des merveilleux cadeaux du sucre et du sirop d&rsquo;\u00e9rable du Gitchie Manidoo toute l&rsquo;ann\u00e9e.<\/p>\n<p><em>Lynn Jones est une membre fondatrice de l&rsquo;Institut de la rivi\u00e8re des Outaouais (IRO), une organisation sans but lucratif et caritative bas\u00e9e dans la vall\u00e9e de l&rsquo;Outaouais.
